Abstract

Studies on heritage food have gained widespread attention, driven by concerns about its sustainability within the community and its viability as a commodity for economic development. While often associated with tourism, heritage food is fundamentally rooted in local nutritional culture, reflecting the uniqueness of tradition amidst global food variations, particularly in urban settings. This study examines the development, commodification, and consumption of Malay heritage food in Kuala Lumpur using a mixed-methods approach that integrates systematic literature research, observation, interviews, and surveys with key stakeholders, including business actors, experts, practitioners, and consumers. Findings reveal that the development of Malay heritage food in the city’s multi-ethnic context, facilitated through business activities, has enhanced accessibility and diversified infrastructure, offerings, services, and technologies supporting heritage food consumption. Business strategies centred on marketing, innovation, knowledge, and social capital are identified as critical resources for competitive performance. Notably, the authenticity of heritage food remains a priority in contemporary business practices aimed at sustaining traditional food heritage. From a consumer perspective, food choices and perceptions of authenticity foster positive attitudes and behaviours that align with sustainability efforts. This research contributes to the framework of heritage food sustainability by highlighting the dynamic relationship between commodification and authenticity. It positions heritage food as both a cultural asset and a commercially viable product that reflects identity, tradition, and urban consumerism in Malaysia.
